紅曲為麯黴科真菌紅麯黴Monascus purpureus Went.的菌絲體寄生在粳米上而成的紅麴米。

 

紅麴米所產生的次級代謝產物中，紅麴菌在發酵過程中會產生一種具有腎毒性和三致作用的真菌毒素—橘黴素(Citrinin)。

 

橘黴素是一種真菌毒素，可抑制革蘭氏陽性菌如鏈球菌、芽孢桿菌等食物腐敗菌的生長，橘黴素本身具有腎毒性和肝毒性，食用過量能夠致畸、致癌和誘發突變。經過加熱，它可以分解成多種毒性更高產物。

 

紅麴中的代謝物monacolins，與Statin類藥物相同，會阻礙體內輔酶Q10合成，造成輔酶Q10濃度下降。輔酶Q10是細胞中重要酵素，能協助合成能量，若缺乏將造成疲勞、肌肉疼痛受損、心臟衰竭等症狀，嚴重甚至會造成橫紋肌溶解症。

 

 

使用紅麴應注意事項:

 

l   孕婦哺乳及孩童勿使用紅麴（有安全上疑慮）。

 

l   紅麴勿與降膽固醇藥物（Statin類，Lovastatin、Lipitor、Zocor）合併使用，紅麴會增強藥物作用，可能造成肝腎受損。

 

l   紅麴勿與抗凝血藥物合併使用（warfarin 、clopidogrel 、aspirin），可能增加出血風險。

 

l   紅麴勿與葡萄柚汁一起服用，可能增強monacolins作用，引發史塔丁藥物的常見副作用。

 

l   肝腎功能不良者請勿使用紅麴。
